Today we're making Vegan Pad Thai! This is one of my favorite recipes, and I have been absolutely obsessed with it this past month. It's one of those dishes that I always assumed would be too difficult to make at home, but that couldn't be further from the truth. It's fast, cheap and very, very easy!
Here's What You'll Need...
-Noodles (I used Stir-fry Rice Noodles)
-Vegan Egg (I used Follow Your Heart, but scrambled ToFu will do)
-Tamari or Soy Sauce
-Peanut Butter (Creamy/Smooth is Best)
-White Wine Vinegar
-Oil (Olive, Coconut your choice)
-Red Chili Pepper (Flakes)
