Fill with lentils..
Top with some vegan cheese and bake on high heat until cheese in melted. About 400 degrees for 15 mins.
Drizzle some vegan sour cream on top (recipe to come), some heirloom cherry tomatoes (to stay on theme), top with chives and cracked black pepper and voila! A delicious dish in no time!!
